Ingredients

  • 6 cups of chicken stock

  • 1/3 cup of dried scallop

  • 1/4 cup of fried red onion

  • 3 cups of chopped winter melon

  • A pinch of salt and black pepper to taste

  • Drizzle sesame oil

  • 2 TBS of chopped green onion

Directions

  • Soak the scallops for about 15 minutes
  • Boil the chicken stock on medium high heat.
  • Add winter melon, scallops and let it simmer for 15 minutes.
  • Add salt, pepper and fried onion to it
  • Add green onion and drizzle oil over it
  • Done
