Soy sauce chicken is a traditional dish from northern China and a classic example of red cooking technique, where meat is simmered in a soy sauce-based liquid along with various seasonings. It results in tender, succulent meat that falls off the bone.

Ingredients

  • 7 full chicken wings

  • 1 tablespoon of Chinese cooking wine / Shaoxing Huatiao wine

  • 1.5 tablespoons of premium dark soy sauce

  • 2.5 tablespoons of low sodium light soy sauce

  • 2 teaspoons of sugar

  • Stems from 2 stalks of spring onion

  • 4 cloves of garlic

  • Some cooking oil

  • 1 thumb size ginger – sliced

  • 2.5 cups of water

Directions

  • Marinade the chicken wings with Shaoxing wine, dark soy sauce, light soy sauce, sugar. Add spring onion and garlic in the mixture.
  • Mix well and refrigerate it for 1 hour.
  • Heat some oil in a frying pan on medium-high heat. Add ginger and cook until they are fragrant.
  • Add wings to sear them. (Place the skin side down). Sear each side for a minute
  • Add the remaining marinade and aromatics in.
  • Add water, close the lid and simmer for 15 mins over medium flame.
  • Remove the lid and cook until the sauce reduces.
  • It is ready to be served!
