Memil guksu is a traditional South Korean soba noodle soup, hence the name, with memil meaning buckwheat, and guksu meaning noodle soup. The dish consists of buckwheat noodles, eggs, green onions, and seaweed. They’re boiled in a broth made from guksijangguk and Japanese hondashi.

Once cooked, the noodles are topped with the eggs and toasted seaweed strips. The dish can be enriched with lemon juice, and it’s sometimes served with a dipping sauce based on tsuyu and rice wine on the side. Memil guksu noodles are always served cold.

Ingredients

  • soba noodles (buckwheat noodles),

  • tsuyu or soba suace,

  • water,

  • wasabi(*optional)

  • garnish
  • grated radish,

  • radish sprouts

  • spring onion

  • laver

Directions

  • Mix the tsuyu, water in a bowl and Chill in the freezer until very cold.
  • The water:sauce ratio varies on the product, so check the directions on the sauce bottle.
  • Add dried soba noodles to a pot of boilling water and cook for 4-5 minutes
  • Rinse with cold water to prevent further cooking, shake off any excess water.
  • Place the soba noodles, ganish and cold both in a bowl.
  • Serve with wasabi on the side.
