Ingredients

  • Lobster Rolls with Mayo
  • 2 live lobsters

  • Martin’s Potato Rolls

  • 1 tablespoon butter

  • 2 tablespoons red onion, minced

  • 1 rib celery, minced

  • 1 tablespoon lemon juice

  • 1 tablespoon mayonnaise

  • Salt

  • Pepper

  • Chives, chopped for garnish

  • 5 tablespoons butter

Directions

  • Lobster Roll with Mayonnaise
  • In a large pot of boiling salted water, cook the lobsters until they turn red, about 8 to 10 minutes. Allow the lobsters to cool, then remove the meat (watch this tutorial for shelling a lobster) and chop into ½-inch pieces.
  • Place a skillet over medium heat and add a tablespoon of butter. Toast the buns on both sides. Reserve.
  • In a mixing bowl, combine the lobster meat with the red onion, celery, lemon juice and mayonnaise. Season with salt and pepper.
  • Fill the toasted buns with the lobster mixture and garnish with chopped chives.

  • In a large pot of boiling salted water, cook the lobsters until they turn red, 8 to 10 minutes. Allow the lobsters to cool, then remove the meat and chop into ½-inch pieces. Be sure to save your shells to make shellfish stock.
  • Place a skillet over medium heat and add one tablespoon of the butter. Toast the buns on both sides. Reserve.
  • Place the remaining 4 tablespoons of butter in a skillet over medium heat. Cook until the butter starts to brown and smell nutty, about 4 minutes.
  • Fill the toasted bun with the lobster meat and drizzle with the browned butter. Garnish with chives.
