Mexican Queso Flameado

minutesQueso flameado (Spanish for “flamed cheese”; also queso fundido, “melted cheese” or choriqueso) is a dish of hot melted cheese and spicy chorizo that is often served flambé.
Often compared to cheese fondue, it is a party dish; it is popular at cookouts and in restaurants as an appetizer.
Ingredients
8 ounces Mexican chorizo casings removed
1 small white onion minced
1 large poblano pepper seeded and diced
1/2 pound shredded monterey jack cheese
1/2 pound grated oaxaca cheese
2 medium Roma tomatoes diced, for garnish
1/4 cup freshly chopped cilantro for garnish
Directions
- Heat a 9-inch cast-iron skillet over medium-high heat. Add in chorizo and cook, stirring occasionally until browned, about 5 minutes.
- Add in onion and poblano pepper and saute until soft and chorizo is completely cooked through, about 7 to 10 minutes. Drain excess grease and moisture.
- Stir in shredded cheeses and transfer the skillet to the oven, about 8 inches from the broiler. Broil on high 3 to 5 minutes, until cheese is melted, bubbling, and starting to brown.
- Garnish with Roma tomatoes and cilantro. Serve hot with tortilla chips.
