Barbecued meat is the gastronomic passion of the so-called “world capital of barbecue”, also known as Kansas City. Barbecued pork ribs, flavorful slices of hot or cold beef brisket, or a “pig salad” of succulent pulled pork – those are just some of the delicacies of the Kansas City-style barbecue.

Ingredients

  • 2 Racks of Spare Ribs

  • Rib Rub – Use your favourite.

  • Apple Juice

  • Boiling Water

Directions

  • Rinse both racks of ribs. Once rinsed make sure to dry off with a paper towel.
  • Next flip over the ribs which reveals the tough membrane which you will remove by wedging a butter knife underneath then pulling away. Grab your favourite Rib rub (preferably something a little more sweet) then liberally apply it to both sides. After your ribs have been rubbed, place some plastic wrap over the ribs and place them in the fridge for 3 hours.
  • After 3 hours remove the ribs from the fridge and let them rest for 30 minutes at room tempreture before you place them on the grill using the indirect method. Begin cooking for around 5 hours at 250 degrees.
  • After 45 minutes apply a coat of apple juice to the ribs and repeat this step every 45 minutes until finished.
  • After around 5 hours you ribs will be done and you can now apply your final Kansas style BBQ Sauce and continue to cook another 15 minutes so that the sauce caramelizes.
  • After 15 minutes, remove from heat and let rest 5 -7 minutes, slice between the bones and enjoy. You should now be eating some incredible Kansas City Style Ribs!
