Ingredients

  • 3 lbs Sweet Potatoes/Yams

  • 1 ¼ Cups Granulated Sugar

  • 1 Cup Brown Sugar

  • 4 Eggs

  • ¼ Cup Milk

  • 1 Cup Butter

  • 1 Tbsp Self-rising Flour

  • 2 Pie Crusts

  • 1 tsp Lemon Extract

  • 2 tsps Vanilla Extract

  • 1 tsp Cinnamon

  • 1 tsp Nutmeg

  • 1/8 tsp Ginger

  • ½ tsp Kosher Salt

Directions

  • Preheat Oven 350 degrees.
  • Add the potatoes to a large pot of water then boil for 30 minutes or until your potatoes are easily pierced by a fork. After 30 minutes remove the pot from the heat then rinse with water and peel the potatoes.
  • Place the peeled potatoes in your mixing bowl add the melted butter then mix well.
  • Add the granulated sugar, brown sugar, cinnamon, nutmeg, ginger, salt, vanilla extract, lemon extract, flour, milk and eggs.
  • Transfer the batter to the pie shells and then transfer the pies to the preheated oven and bake for one hour.
  • After one hour remove them from the oven and place on a wire rack to cool.
