Ingredients
7 full chicken wings
1 tablespoon of Chinese cooking wine / Shaoxing Huatiao wine
1.5 tablespoons of premium dark soy sauce
2.5 tablespoons of low sodium light soy sauce
2 teaspoons of sugar
Stems from 2 stalks of spring onion
4 cloves of garlic
Some cooking oil
1 thumb size ginger – sliced
2.5 cups of water
Directions
- Marinade the chicken wings with Shaoxing wine, dark soy sauce, light soy sauce, sugar. Add spring onion and garlic in the mixture.
- Mix well and refrigerate it for 1 hour.
- Heat some oil in a frying pan on medium-high heat. Add ginger and cook until they are fragrant.
- Add wings to sear them. (Place the skin side down). Sear each side for a minute
- Add the remaining marinade and aromatics in.
- Add water, close the lid and simmer for 15 mins over medium flame.
- Remove the lid and cook until the sauce reduces.
- It is ready to be served!
