Ingredients
3 lbs Sweet Potatoes/Yams
1 ¼ Cups Granulated Sugar
1 Cup Brown Sugar
4 Eggs
¼ Cup Milk
1 Cup Butter
1 Tbsp Self-rising Flour
2 Pie Crusts
1 tsp Lemon Extract
2 tsps Vanilla Extract
1 tsp Cinnamon
1 tsp Nutmeg
1/8 tsp Ginger
½ tsp Kosher Salt
Directions
- Preheat Oven 350 degrees.
- Add the potatoes to a large pot of water then boil for 30 minutes or until your potatoes are easily pierced by a fork. After 30 minutes remove the pot from the heat then rinse with water and peel the potatoes.
- Place the peeled potatoes in your mixing bowl add the melted butter then mix well.
- Add the granulated sugar, brown sugar, cinnamon, nutmeg, ginger, salt, vanilla extract, lemon extract, flour, milk and eggs.
- Transfer the batter to the pie shells and then transfer the pies to the preheated oven and bake for one hour.
- After one hour remove them from the oven and place on a wire rack to cool.
